Yummy! with 1 variation to the frosting. July 3, 2010

I made these for a work friends birthday and everybody loved them. They were super moist! Of course, with 1 cup of oil how could they not be? I don't like using so much oil, so next time I might try 1/2-3/4 cup oil instead and maybe even substitute some of the oil for plain yogurt.

I thought the frosting on it's own was sort of bland. It needed more depth, more oomph. I guess I'm just used to having a cream cheese frosting with a red velvet cake, so I just added an 8 oz. block of cream cheese to the mix. That made all the difference! It was so good!

I wasn't sure how much the cakes would rise, so I only filled the cups 3/4's full which gave me 18 cupcakes as opposed to 12 cupcakes stated on the box. This worked out fine since I had more people to feed, and there was just enough frosting for all the cakes (with the addition of the cream cheese). Now that I know the cakes won't rise much, I'll fill the batter to the top and use only 12 muffin cups for a more fuller cupcake.

I made cupcakes for a party and everyone REALLY loved them.  The texture feels velvet-like and the frosting is very light, with a good amount of vanilla in it.  I used slightly less butter than what the recipe called for.  However, the texture seemed unaffected by the small change.

I used the Red Velvet Cake and vanilla bean frosting mix to make cupcakes for a large group. Everyone that tried these cupcakes were impressed, including myself. The frosting was the perfect pairing to the cake. Superb!
